Sweet Potato-Pineapple Breakfast Bread

1 cup packed light brown sugar
1 tbsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/4 tsp baking soda
1 tsp grated orange zest
1/2 cup whole milk
2 large eggs
1/3 cup vegetable oil
1 can (15 oz) sweet potatoes in heavy syrup, drained
2 cups all-purpose flour, divided
1 can (8oz) pineapple tidbits in syrup, drainedRecipe
Preheat oven to 350°. Lightly coat a 9x5 inch nonstick loaf pan with cooking spray; set aside.
In a large bowl, combine all ingredients except 1 cup of the flour and the pineapple. Beat with electric mixer on low speed until blended. Increase to high speed; beat 2 minutes or until smooth. Add remaining 1 cup flour; beat on low speed until just blended. Fold in pineapple; pour batter into prepared pan.
Bake 55-60 minutes or until wooden pick inserted in center comes out almost clean. Cool completely in pan on wire rack. Makes 1 loaf (12 servings)
