    1 tbsp margarine
    1 pkg (16oz) baby carrots
    3/4 cup apple juice
    2 tsp honey
    1 tsp apple cidar vinegar
    salt and pepper

    Recipe



    Melt margarine in a medium skillet over medium-high heat. Add carrots; cook and stir until carrots just begin to brown, about 7 to 8 minutes.

    Add apple juice, honey and vinegar; bring mixture to a boil. Reduce heat to medium and cook until carrots are tender and liquid is reduced to a glaze, stirring occasionally, about 15 minutes. Season to taste with salt and pepper.
