It's a delicious partner for mixed greens, chicken salad, cold poached salmon and sliced tomatoes. Makes 1 1/3 cups. Combine all ingredients in blender and blend until smooth. 2. Season dressing to taste with salt and pepper. (Can be prepared 3 days ahead. Cover and refrigerate.)
