Orange-Marshmallow Yams

Recipe Introduction
Creamy melted marshmallows in the potato mixture as well as on the top make this dish exceptionally light and fluffy.
List of Ingredients
- 2 cans (29ozeach) yams, drained
- 1/3 cup frozen orange juice concentrate, thawed
- 1/2 cup paked golden brown sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon salt
- 8 Safeway marshmallows, cut into quarters
- 1/2 cup chopped pecans
- 25 whole Safeway marshmallows
Instructions
- In a large bowl, mash yams.
- Stir in orange juice concentrate, brown sugar,pumpkin pie spice, salt, and cut-up marshmallows.
- Put into a 9 x 13-inch baking dish.
- Smooth the top.
- Cover with Foil. (May be refrigerated overnight if desired.)
- Bake at 400 degrees F for 20 to 30 minutes or until hot.
- Remove foil and sprinkle with nuts.
- Top with whole marshmallows.
- Bake uncovered for 10 minutes or until marshmallows are melted and golden.
