    Tracey would only give me this recipe if I agreed to keep the name the same. Seems that Tracey and her brother delighted in teasing their Mom. So when "Mom" served this Chicken and Rice Casserole, they would grab their silverware and start singing about getting to eat "Seaweed and Dogfood"
    The really great thing about this recipe is that you can make substitutions for ANY ingredient, and it always turns out delicious.
    So go ahead and substitute turkey or tuna for the chicken or any cream of soup for the cream of mushroom. Add anything you want, or delete any ingredient. The one thing that you don't need to have is any seasoning. Curious huh?


    List of Ingredients


    • Two full chicken breasts
    • 1/2 stick margarine
    • One large onion, diced
    • 1 Cup rice
    • 4 oz pasturized American process cheese (from a jar or a box)
    • 1 can cream of mushroom soup
    • 10 oz frozen broccoli


    Instructions


    1. Remember, you can change any ingredient or portion. If you like lots of chicken, increase the portion, or if you are a vegetarian then just leave it out. You'll have a nice cheesy broccoli rice casserole.
    2. You need 1 paper plate, 1 sharp knive, a spoon for mixing, a medium sized casserole dish (oven and microwave safe) and a medium saucepan.
    3. Wash the chicken, place in the casserole and cook in the microwave for @ 10 minutes (I cover it with wax paper or loosely applied saran wrap to catch the splatters) The chicken can be slightly undercooked.
    4. Meanwhile cut up the onion on the paper plate and saute in the margarine in the saucepan. When the onion turns translucent add the rice and saute for 2 minutes. Add 2 Cups water and bring to a boil. Stir the rice mixture and turn the heat down to a slight simmer. Cover with the paper plate to allow steam to escape. Simmer for 15 minutes.
    5. Meanwhile, when the chicken is done skin and bone if needed, then cut into bite sized pieces. Pour out the chicken juices - you could even pour it over your dog's food... No need to wash the casserole dish, you'll be using it soon.
    6. Add the chicken, soup and cheese to the rice mixture and mix well. Mix in the frozen broccoli and transfer to the casserole dish. Place in a preheated 350 oven and bake for 30 minutes.


    Final Comments


    This always tastes great when served with Iced tea and a nice warm garlic bread.
