Recipe Introduction
Meme was the greatest cook that ever cooked. Everything she made was made with love, which maybe explains why her cooking was so delicious. This is her recipe for Kugel, which we always ate as a side dish. Of course after dinner we all wanted some more for desert. Or a snack. And sometimes we could get some for breakfast, but that was rare because it hardly ever lasted beyond dinner.
List of Ingredients
- 8 oz medium egg noodles
- 1/4 Cup melted margarine
- 4 eggs, beaten
- 3-4 apples peeled and diced
- 1 T lemon juice
- 8 oz or 1 small jar applesauce
- 1/2 Cup seedless raisins (plumped in hot water)
- 1/4 Cup sugar
- 1 1/2 t salt
- 1/2 t vanilla
- 1 t cinnamon sugar
Instructions
- Cook noodles until nearly tender. Drain.
- Meanwhile place the raisins in HOT water until they "plump". Drain the raisins.
- Peel and dice the apples, mix with the lemon juice.
- Beat the eggs and add the remaining ingredients together, mixing well.
- Gently fold the noodles into the applesauce mixture and place in a large greased baking dish.
- Sprinkle the top with cinnamon sugar and bake at 350 for 1 hour. Serve warm
Final Comments
Meme always made her Kugel this way, but I have heard that some people leave out the applesauce and substitue crushed pineapple for the apples. Other people even substitute cottage cheese for the applesauce. I can only imagine what Meme and Papa would think of this! I guess it just goes to show that there's more ways than one to cook a Kugel.
