    Santa Fe Chicken

    Cooked in a wok. Easy and delicious. Serve with crusty bread.


    List of Ingredients


    • 1 1/2 lb. chicken tenders cut in cubes
    • 1 tablespoon paprika
    • 1/2 teaspoon salt
    • 1/2 teaspoon pepper
    • 2 tablesppons oil
    • 1 onion (chopped)
    • 1 green bell pepper (chopped)
    • 1 yellow bell pepper (chopped)
    • 1 red bell pepper (chopped)
    • 1 clove garlic (chopped)
    • 1 can RoTel tomatoes & green chiles
    • 1 1/2 cup instant rice
    • 1 cup monterrey jack cheese
    • 1 can chicken broth


    Instructions


    1. Roll chicken pieces in paprika, salt, and pepper. Chicken should be well coated. Add more paprika if you need to.
    2. Place oil in wok at 325 - 350 degrees.
    3. Add chicken.
    4. Cook 2 minutes or until chicken is browned.
    5. Add onion, chopped bell peppers, and garlic.
    6. Cook 4 minutes, drain off grease if necessary.
    7. Add RoTel, 1 can of chicken broth + 1 can (same size) of water.
    8. Stir in rice.
    9. Bring to boil, cover and remove from heat. Let stand 5 minutes.
    10. Sprinkle with more paprika and add cheese to top.
    11. Serve & enjoy!


    Final Comments


    You can go 2 ways- serve with tortillas and chips & salsa, or serve with a tossed salad and crusty garlic bread.
