Cooked in a wok. Easy and delicious. Serve with crusty bread.
List of Ingredients
- 1 1/2 lb. chicken tenders cut in cubes
- 1 tablespoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablesppons oil
- 1 onion (chopped)
- 1 green bell pepper (chopped)
- 1 yellow bell pepper (chopped)
- 1 red bell pepper (chopped)
- 1 clove garlic (chopped)
- 1 can RoTel tomatoes & green chiles
- 1 1/2 cup instant rice
- 1 cup monterrey jack cheese
- 1 can chicken broth
Instructions
- Roll chicken pieces in paprika, salt, and pepper. Chicken should be well coated. Add more paprika if you need to.
- Place oil in wok at 325 - 350 degrees.
- Add chicken.
- Cook 2 minutes or until chicken is browned.
- Add onion, chopped bell peppers, and garlic.
- Cook 4 minutes, drain off grease if necessary.
- Add RoTel, 1 can of chicken broth + 1 can (same size) of water.
- Stir in rice.
- Bring to boil, cover and remove from heat. Let stand 5 minutes.
- Sprinkle with more paprika and add cheese to top.
- Serve & enjoy!
Final Comments
You can go 2 ways- serve with tortillas and chips & salsa, or serve with a tossed salad and crusty garlic bread.
