    Verda Maye’s Fried Corn

    Recipe Introduction


    My mom always made this in the summer when fresh corn was readily available. Serve with sliced tomatoes, sliced cucumbers in vinegar, and fresh jalapenos.


    List of Ingredients


    • 24 ears of corn
    • ½ package bacon
    • 1 stick butter
    • 1 small carton whipping cream
    • salt & pepper to taste


    Instructions


    1. Cut corn off cob (see note below). Not too deep as you don’t want to get many whole kernels. Run knife down cob after scraping to get the ‘milk’ from the cob.
    2. Fry bacon in skillet, remove, saving the grease.
    3. Add corn to grease and let simmer.
    4. Add 1 stick butter, and slowly add the whipping cream (you don’t want it to be too soupy).
    5. Add salt & freshly ground black pepper to taste.
