    • 1 1/2 c chocolate wafer crumbs
    • 1/3 c finely chopped pecans
    • 2 Tbs sugar
    • 1/3 c butter, melted
    • 2- 8 oz packages cream cheese, softened
    • 1/2 cup sugar
    • 2 tsp vanilla
    • 2 eggs, separated
    • 1 cup semisweet chocolate chips
    • 5 Tbs butter, cubed
    • 4 egg yolks
    • 1/4 c powdered sugar
    • 2 Tbs water
    • 1 tsp vanilla
    • 1/2 cup heavy whipping cream, whipped


    Instructions


    1. Combine chocolate crumbs, pecans and sugar. Stir in melted butter. Press inot bottom and 1-1/2 inches up side of 9 inch springform pan. Bake at 375 for 8 minutes. Remove from oven and decrease temperature to 325.
    2. In a mixing bowl, beat cream cheese, sugar, and vanilla until smooth. Add egg yolks; beat until just combined.
    3. In a separate mixing bowl, beat the egg whites until stiff peaks form; fold into cream cheese mixture. Pour into crust and place in oven.

    4. Bake for 25-30 minutes, until the center is just set. Cool on a wire rack for 10 minutes. Carefully run knife around the edge of the pan to loosen. Cool 1 hour, and then place in refridgerator until completely cool.
    5. In microwave, melt chocolate and butter. Cool for 10 minutes. In a small heavy saucepan, whisk egg yolks, sugar, and water. Cook and stir over low heat until mixture reaches 160 degrees, stir in vanilla. Whisk in chocolate mixture. Set saucepan in ice and stir until cooled, about 2 minutes. Fold in whipped cream.
    6. Spread over cheesecake and refrigerate until set. Remove sides of pan and garnish with additional whipped cream and chocolate shavings.
