    You have to baby this dish and drain off the fat every 15-20 minutes. But it turns out so rich and flavorful.

    List of Ingredients




    2 wild ducks
    lots of salt
    Baste: 1/2 sm can of frozen orange juice
    2 T brown sugar
    1 cup hearty red wine
    cornstarch to thicken gravy
    orange slices (not mandarin)

    Recipe



    Wash ducks. Take out kidneys. Salt well. Place orange slices on ducks with toothpics. Cook at 425 degrees for 1 1/2 hours in seperate glass pans. Drain grease every 15-20 minutes and baste after draining grease.
    Cool, take drippings and add cornstarch to thicken. Carve.
