My friend, Emeril, shared this recipe with me on his TV show. I changed it, slightly. Don't tell him...





List of Ingredients



• 1/2 cup mayo
  
• 1/4 cup mustard
  
• 1 med onion - chopped
  
• 2 T vinegar
  
• 1 T chopped garlic
  
• 2 T chopped cilantro
  
• 1 lb red potatoes, boiled until tender
  
• 1/4 lb bacon, cooked until crispy & drained
  
• 2 hard boiled eggs - chopped
  
• 1 sm can - sliced olives
  
• S & P
  
• chopped chives or green onions for garnish
  






Instructions



1. In a large bowl, combine mayo, mustard, onions, vinegar, garlic, cilantro & olives.
   
2. Add cooked potatoes, chopped eggs, bacon and season with S&P.
   
3. Stir well
   
4. Garnish with chives or green onions
