Chocolate and banana pancakes

Recipe Introduction
These are beautiful, they are a nice combination of chocolate and a sweet tasting banana. There tempting aren't they.
List of Ingredients
- 3 large bananas
- 6 tbsp orange juice
- Grated rind of 1 orange
- 2 tbsp orange- or banana- flavoured liqueur
- 1 tbsp cocoa powder
- 2 tsp cornflour (cornstarch)
- 3 tbsp milk
- 40g dark chocolate
- 15g butter
- 175g golden (light corn) syrup
- 1/4 tsp vanilla flavouring
- 100g plain (all purpose) flour
- 1 tbsp cocoa powder (for the pancakes)
- 1 egg
- 1 tsp sunflower oil
- 300ml milk oil, for frying
Instructions
- Peel and slice the bananas and arrange them in a dish with the orange and rind and the liqueur. Set aside.
- Mix the cocoa powder and cornflour in a bowl, then stir in the milk. Break the dark chocolate into pieces and place pan with butter and golden syrup. Heat gently, stirring until well blended. Add cocoa powder mixture and bring to the boil over a gentle heat, stirring. Simmer for 1 minute, then remove from the heat and stir in the vanilla flavouring.
- To make the pancakes, sieve the flour and cocoa powder into a mixing bowl and make a well in the centre. Add egg and oil. Gradually whisk in the milk to form a smooth batter. Heat a little oil in a heavy-based frying pan and pour off any excess. Pout a little batter and tilt the pan to coat the base. Cook over medium heat until the underside is browned. Flip over and cook the other side. Slide the pancake out of the pan and keep warm. Repeat until all the batter has been used.
- To serve, reheat the chocolate sauce for 1-2 minutes. Fill the pancakes with bananas and fold in half or into triangles. Pour over a little chocolate sauce and serve.
