Recipe Introduction
This is a great cold dessert and I really love it. What about you.
List of Ingredients
- 450g (1lb) gooseberries, apples, black or redcurrants, rhubarb, blackberries or raspberries
- 45ml (3tbsp) water
- 75-175g (3-6oz) caster sugar, to sweeten depending on sharpness of fruit
- 350ml (12fl oz) fresh double cream
- 30ml (2tbsp) fresh milk
- Red or green food colouring (optional)
- Chopped walnuts or chopped toasted almonds and fruit for decoration
Instructions
- Prepare fruit according to type. Put into a saucepan with water.
- Bring slowly to the biol, cover with lid and simmer until fruit is soft.
- Remove from heat. Add sugar to taste. Either rub through a sieve or liquidise. Leave until completely cold.
- Whip double cream and milk together until light and stiff then gradually fold in the fruit puree.
- If fool is pale add in colour tint with food colouring, if used.
- Transfer to 4 sundae glasses and chill.
- Befor serving, add all of the nuts evenly of the 4 sundae dishes.
