Ricotta Cookies

- 1/4 lb. butter
- 1/4 c. ricotta
- 1 tsp. vanilla
- 1 c. sugar
- 1 egg
- 2 c. sifted flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
Instructions
- allow butter to soften.
- blend with ricotta until creamy.
- add vanilla, mix well.
- add sugar gradually, beating until well blended.
- add egg and mix well.
- slowly stir in dry ingredients and blend well.
- drop by teaspoons onto greased cookie sheet.
- bake at 350 degrees for 10 minutes.
- makes 30-36 cookies, depending on size.
