Recipe Introduction
The plain pastry called for by the Lily Wallace recipes.
List of Ingredients
- 2 cups flour
- 3/4 tsp salt
- 2/3 cup shortening
Instructions
- Mix and sift the flour and the salt.
- Cut the shortening in with a knife.
- Add only enough water to hold the ingredients together. Do NOT knead.
- Divide the dough into two parts and roll out on a slightly floured board.
- Line pan with 1/2 pastry.
- Pinch pastry to make fancy edge and prick bottom and sides with fork. Bake in a very hot oven [460F] 10 to 15 minutes.
- For a two crust pie, line pie, put in filling, cover with top and bake as directed.
- If you desire a less rich pie only use 1/2 cup shortening.
- Yields two pastry shells.
- You may also use Flaky pastry where this is called for.
