A beef casserole
List of Ingredients
- 1 large onion, chopped
- 1 tbsp fat
- 2 tsp flour
- 1 [#2] can tomatoes, chopped [if I had to learn can sizes so do you]
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 bay leaf
- 4 cups cubed roast beef
- 12 large prunes
- 6 to 8 very small potatoes [like creamers]
Instructions
- Start oven to 375F
- Cook onion in fat in metal based casserole until golden.
- Blend in the four and then add tomato, seasonings and beef. Stir to mix well. Simmer 10 minutes
- Stuff prunes with pieces of boiled potatoes. Add remaining potatoes and remaining prunes to beef mix. Top with stuffed prunes. Cover.
- Bake for 30 minutes. Uncover bake 10 more.
