Vanderbilts Chicken or Turkey Scallop

Use your leftover turkey or chicken
List of Ingredients
- 1/3 cup cooked rice
- 2 cups chicken consomme
- 2 1/2 cups chicken or turkey
- 1/3 cup chopped celery
- 2 finely diced canned pimentos
- 2 eggs beaten
- 1/4 cup heavy cream
- 3/4 tsp salt
- 1/8 tsp poultry seasoning
- 1/4 cup buttered crumbs
Instructions
- Preheat to 325F. Grease a 10X6X1.5 inch dish
- Cook rice in chicken broth about 10 minutes or until tender
- Cobine with remaining ingredients except your crumbs. Pour into baking dish. Top with crumbs
- Bake 45 to 50 minutes. Should be hot and browning.
