    Baked hubbard Squash recipe number 1878


    List of Ingredients


    • small hubbard squash
    • 3 tbsp butter or fat
    • 3 tbsp chopped onion
    • 2 tbsp chopped green pepper
    • 1 tsp salt
    • 1/8 tsp pepper
    • 1/8 tsp paprika
    • 1/4 cup fine bread crumbs


    Instructions


    1. Cut squash into small pieces and boil in salted water about 30 minutes or until tender
    2. Drain and mash.
    3. Melt the butter. Add onion and pepper and saute slowly 5 minutes.
    4. Add onion, pepper, salt, pepper, paprika to squash. Mix well.
    5. Turn into greased baking dish. Sprinkle with crumbs, salt, pepper and bake in hot oven [400F] 25 minutes.
    6. Serves 6
