    Apple Pie

    List of Ingredients


    • For the crust:
    • 2 cups flour
    • 2 tbspn sugar
    • 16 tbspn crisco (the plain kind, not butter flavored0
    • 1/2 cup ice water
    • For the filling:
    • 10 apples, granny smith, or a mixture of golden delicious, granny smith, macintosh, as you wish, peeled, cored,quartered and thinly sliced
    • 3 tbspn flour
    • 1/2 cup each white sugar and brown sugar (brown sugar should be packed in measuring cup)
    • 1 tspn cinnamon
    • 1/2 tspn ground ginger
    • 1/2 tspn nutmeg
    • juice of half a lemon
    • 1 tbspn butter


    Instructions


    1. Preheat oven to 450.To make crust: Put flour and sugar in medium bowl.Add crisco. Using two knives or a pastry cutter, cut crisco into flour/sugar until it is well blended-grainy.Sprinkle ice water in, a little at a time and blend mixture with a fork until a ball forms. If it is too sticky, add flour, a teaspoon at a time. Dough may be wrapped in plastic and refrigerated.

    2. Divide dough in two when ready to roll it. Roll one half out on a floured board or wax paper. Use flour generously to keep dough rolling smoothly. Place rolled out dough in pie pan leaving plenty of overlap to seal crust.

    3. To make filling: Place peeled, sliced apples in large bowl and sprinkle with lemon juice.

    4. Mix together sugars, cinnamon, ginger, nutmeg and flour.

    5. Put apples in pie pan lined with pie crust. Top with sugar mixture, or, you can put apples in half at a time and layer sugar mixture in between and on top. Dot with small pieces of butter.

    6. Roll out second pie crust and cover. Trim the edges, seal and crimp. Cut vents in top crust using a sharp knife or a fork.

    7. If using foil pan, slide onto cookie sheet or some rigid pan before placing in oven. Place pie in oven and bake at 450 for 10 minutes. Then lower heat to 350 and bake for an additional 55 minutes, or until crust is golden.

    8. Remove from oven and cool on a rack.



    Final Comments


    A nice variation is to sprinkle brown sugar and chopped pecans on the bottom crust before adding the apples.
