    This recipe doubles easily. Any kind of cucumber does well-regular salad cukes, pickle cukes or the long skinny English or European cukes. The thinner they are sliced, the better the salad. It needs to sit for at least an hour or two before eating, and can even be made the day before.


    List of Ingredients


    • 1 tspn sugar
    • 1/4 cup seasoned rice vinegar
    • 2 tbspns vegetable oil
    • 1/4 cup or more fresh dill
    • Cucumbers- either 4 small, two salad cukes, or one of the long ones
    • Salt and pepper


    Instructions


    1. Mix the sugar, vinegar,and oil in a bowl. Mince the dill and add. (or you can mix it all in a small food processor)
    2. Peel (if you want to, or wash) and thinly slince cucumbers. Add to dressing, toss, salt and pepper to taste. Cover and chill.
