Tom Yum Gai-Coconut Chicken Hot and Sour

Recipe Introduction
This takes about 15 minutes to put together and is really good.
List of Ingredients
- 1 1/2 cans coconnut milk
- 3/4 lb chicken breast filet, sliced into thin strips
- 1 cup shitake mushrooms, sliced thin, no stems
- 2 1/2 -3 tbspns lime juice
- bunch of cilantro
- 1 stalk lemon grass
- 4-5 chili peppers (thai)
- 1 tspn sugar
- 3 tbspns fish sauce
Instructions
- Cut lemon grass into 4 pieces and smash with side of cleaver, rolling pin, anything to bruise pieces well. Cut chili peppers in half, or bruise like lemongrass.
- Heat 1 can coconut milk to boil. Reduce heat to medium low. Add lemon grass, chicken and fish sauce. Stir until chicken is done, about 3 minutes.
- Add rest of coconut milk and 1/2 cup water. Add mushrooms and bring to boil.
- Add lime juice, sugar and chili peppers. Stir until heated through.
- Remove from heat and garnish with lots of chopped cilantro.
Final Comments
If it is too hot, add rest of coconut milk to adjust.
