    Santa Fe Chicken Pizza

    List of Ingredients


    • Grilled Lime Chicken:
    • 2 5oz. boneless/skinless chicken breasts
    • 1-tablespoon fresh lime juice
    • ½ teaspoon Worcestershire sauce
    • 1 ½ teaspoons soy sauce
    • ½ teaspoon honey
    • pinch cumin
    • pinch red pepper flakes
    • 1 tablespoon chopped fresh cilantro
    • 2 tablespoons olive oil
    • Prepare a hot grill. Mix the marinade ingredients together; marinate the breasts for 15 minutes. Grill the breasts for 5-7 minutes per side (discard any leftover marinade). Remove the chicken from the grill; chill thoroughly. Cut the cold grilled chicken into ½-inch cubes and set aside in the refrigerator
    • Caramelized Onions:
    • 1½ tablespoon unsalted butter
    • 1 small red onion, peeled and sliced into 1/8-inch thick rings
    • ¼ teaspoon red wine vinegar
    • 1-teaspoon soy sauce


    Instructions


    1. Melt the butter in a small non-stick skillet over medium-high heat and cook the onions, stirring, until they just begin to turn brown, 3 to 4 minutes.
    2. . Add vinegar; reduce heat to medium-low and continue cooking for 10 minutes, stirring to prevent scorching.
    3. Add soy sauce and cook 5 to 10minutes longer, stirring.
    4. When done, onions should be quite limp and caramelized brown.
    5. To make the pizza:
      Distribute half the sautéed onions over the surface of the stretched dough.
    6. Cover the onions with ¾ mozzarella.
    7. Evenly distribute half the grilled lime chicken over the cheese. Sprinkle an additional ¼ cup mozzarella over the chicken.
    8. Transfer the pizza to the oven; bake until crust is crisp and golden and the cheese at the center is bubbly, 8 to 10 minutes.
    9. When pizza is cooked, carefully remove it from the oven. Sprinkle 1-tablespoon cilantro over the hot cheese and slice the pizza. Serve with salsa, sour cream and guacamole.
