    Recipe Introduction


    This is a great soup for those long winter nights.


    List of Ingredients


    • 1 sm. onion, chopped fine
    • 2 med. potatoes, 1/2 inch diced
    • 1/2 lb. bacon, 1 inch pieces
    • 2 can clam juice
    • 2 cups milk
    • 2 cans minced clams
    • Salt and Pepper to taste


    Instructions


    1. In a large saucepan, cook bacon until crisp. Drain and save 2 tablespoons of bacon grease.
    2. Cook onions in the bacon grease about 3 minutes.
    3. Add potatoes, clam juice and milk.
    4. Raise heat to bring mixture to a roling boil, then reduce heat to medium.
    5. Cook for 5 minutes. Add clams and cook until potatoes are tender.
    6. Season with salt and pepper to taste.


    Final Comments


    Serve hot. Top with fresh chopped parsley and diced garlic croutons. Serves 4
