Recipe Introduction
This is a great soup for those long winter nights.
List of Ingredients
- 1 sm. onion, chopped fine
- 2 med. potatoes, 1/2 inch diced
- 1/2 lb. bacon, 1 inch pieces
- 2 can clam juice
- 2 cups milk
- 2 cans minced clams
- Salt and Pepper to taste
Instructions
- In a large saucepan, cook bacon until crisp. Drain and save 2 tablespoons of bacon grease.
- Cook onions in the bacon grease about 3 minutes.
- Add potatoes, clam juice and milk.
- Raise heat to bring mixture to a roling boil, then reduce heat to medium.
- Cook for 5 minutes. Add clams and cook until potatoes are tender.
- Season with salt and pepper to taste.
Final Comments
Serve hot. Top with fresh chopped parsley and diced garlic croutons. Serves 4
