TOMATO SAUCE
List of Ingredients
- 1 LG ONION (CHOPPED)
- 2 CLOVES GARLIC (CHOPPED)
- 3 RIBS CELERY (CHOPPED)
- 1/3 CUP OLIVE OIL
- 1 - 12 OZ CAN TOMATO PASTE
- 3 TBSP SUGAR
- 3 CUPS WATER (MORE IF NEEDED)
- 1 - 15 OZ CAN TOMATO PUREE OR 2 - 14 OZ CANS WHOLE TOMATOES (CHOPPED)
- 1 TSP EACH - SALT, PEPPER, ITALIAN SEASONING
Instructions
- IN LARGE HEAVY POT, COOK ONIONS, GARLIC AND CELERY IN OLIVE OIL UNTIL SOFTENED.
- ADD TOMATOE PASTE AND SUGAR. COOK CONSTANTLY UNTIL MIXTURE BEGINS TO HOLD TOGETHER AND IS A NICE RICH COLOR - ABOUT 30 MINUTES
- ADD THREE CUPS WATER AND COOK DOWN UNTIL SAUCE THICKENS SLIGHTLY.
- ADD PUREE OR TOMATOES AND OTHER SEASONINGS. COOK COVERED OVER LOW HEAT FOR ONE HOUR.
- ADD MORE WATER IF THE GRAVY GET TOO THICK OR STARTS TO STICK. STIR EVERY SO OFTEN AS THE MIXTURE SIMMERS.
- SERVE OVER PASTA, PREFERABLY ANGEL HAIR.
