    • 3 RIBS CELERY
    • 1/2 CUP FRESH PARSLEY (CHOPPED FINE)
    • 1 TSP FRESH THYME
    • 1-1/2 LBS GROUND CHUCK
    • 1/2 LB GROUND PORK
    • 1/2 LOAF STALE FRENCH BREAK
    • 1 CUP WATER
    • 2 EGGS
    • 1/2 TSP EACH -BLACK PEPPER, SALT, ITALIAN SEASONING
    • OLIVE OIL FOR COOKING


    Instructions


    1. GENTLY MIX GROUND CHUCK WITH ONION, CELERY, ITALIAN SEASONING, PEPPER & SALT.
    2. BREAK FRENCH BREAK INTO SMALL CHUNKS, COVER WITH 1 CUP WATER. DRAIN FRENCH BREAD IN COLANDER, SQUEEZING OUT AS MUCH WATER AS POSSIBLE.
    3. ADD DAMP FRENCH BREAK AND EGGS TO THE MIX MIXTURE.
    4. CHILL MIXTURE FOR ONE HOUR.
