Hummus with Pita Triangles and Crudites

CARBOS AND VEGGIES; LEVEL ONE
SERVES 4
This is a delicious dip with whole wheat pita triangles and fresh vegetables. It’s also a great nonfat sandwich spread instead of mayonnaise. Garbanzo beans can be purchased dried or canned, which are cooked and ready to use.
List of Ingredients
4 cups cooked or canned garbanzo beans (chickpeas)
3 garlic cloves
4 tablespoons lemon juice
Dash of cayenne pepper
1 sprig parsley
1 package whole wheat pita (4 pockets), cut into triangles
Assorted cut-up raw vegetables (broccoli, zucchini strips, radishes, red and green bell pepper slices)
Recipe
In a food processor or blender, puree the garbanzos with the garlic, lemon juice, and cayenne until smooth. Adjust seasoning to taste. Garnish with a sprig of parsley and a sprinkle of cayenne. Spread on pita triangles and serve with crudites.
