Salmon Steaks with Fried Ginger and Lime

SERVES 4
Great with steamed asparagus! This salmon is topped with yummy little fried pieces of ginger and fresh crispy vegetables that have an Asian flair.
List of Ingredients
SALMON
4 salmon steaks
2 tablespoons olive oil
Salt and freshly ground black pepper
1 lime (sliced paper thin with peel)
2 Kirby cucumbers (halved lengthwise and sliced thin)
A handful of daikon sprouts (optional)
3 tablespoons soy sauce
Juice from 1 lime
FRIED GINGER
1 piece (3 inches long) fresh ginger
1/2 cup vegetable oil
Recipe
Peel the ginger and thinly slice. Cut the slices into thin strips. Heat the vegetable oil in a frying pan. When hot, add the ginger and cook until dark golden brown. Remove with a slotted spoon; set aside to drain on paper towels.
Prepare the grill. Brush the salmon with a little olive oil, then season with salt and pepper. Cook on a hot grill until just cooked through; cooking time will vary depending on the thickness of the fish, from 5 to 15 minutes. Cut each lime slice into 8 pieces, as if you were cutting a pie. Toss the lime with the cucumbers and daikon sprouts in a mixture of the soy sauce and lime juice
Place the salmon on 4 individual plates and heap the vegetable garnish on the fish. Top with a sprinkle of fried ginger.
