This is the sauce Italian women traditionally make when tomatoes are in season. It has an amazingly pure, fresh taste. Make it when you have fresh tomatoes that are so wonderful they will stand on their own. This is a great sauce by itself, but you can also add fresh veggies, including onions, garlic, peppers, and mushrooms. Just remember—no Proteins/Fats in this Level One Carbos meal.
List of Ingredients
12 to 15 vine-ripened tomatoes (halved crosswise)
Salt and freshly ground black pepper
1/2 teaspoon hot red pepper flakes
1 pound whole wheat Jerusalem artichoke pasta (or other whole-grain pasta)
A few sprigs of Italian flat-leaf parsley
Recipe
Place the tomatoes, cut side up, in a large saucepan. Cover with a fitted lid. Cook over very low heat for approximately 40 minutes. Gently mash the tomatoes and add salt, pepper, and red pepper flakes to taste. Cook the pasta according to package instructions. Drain the pasta and place on a large platter. Cover with the fresh tomato sauce and garnish with the parsley.
