    Greek Salad

    PROTEINS/FATS AND VEGGIES; LEVEL ONE

    SERVES 4


    This is always a winner and so simple to prepare. Makes you want to put a handkerchief between your teeth and dance.

    List of Ingredients




    3 medium tomatoes (chopped)
    1 medium cucumber (chopped)
    8 ounces feta cheese (crumbled)
    1/2 medium red onion (chopped)
    3 tablespoons extra-virgin olive oil
    Juice from 1/2 lemon
    Freshly ground black pepper
    A pinch of dried oregano
    Couple sprigs of fresh basil

    Recipe







    Combine the tomatoes, cucumber, feta cheese, and red onion in a medium bowl. Mix, then drizzle with the olive oil and lemon juice. Grind the black pepper over the top of the salad, sprinkle with a touch of oregano, and garnish with basil sprigs. Adjust seasonings to taste.
