    Iceberg Lettuce with Roquefort Dressing

    PROTEINS/FATS AND VEGGIES; LEVEL ONE

    SERVES 6


    Sometimes the simplest salads taste the best. Try this delicious blue cheese dressing on any of your favorite lettuces.

    List of Ingredients




    1 head iceberg lettuce (rinsed and dried)
    Roquefort Dressing
    1 basket cherry tomatoes
    Freshly ground black pepper


    Roquefort Dressing

    1 tablespoon red wine vinegar
    4 ounces crumbled blue cheese (preferably Roquefort)
    3/4 cup sour cream
    Salt and freshly ground black pepper

    Recipe







    Slice the lettuce into thin strips. Arrange on 4 plates. Pour dressing over lettuce and garnish with cherry tomatoes. Season to taste with pepper.

    Roquefort Dressing

    Combine the ingredients in a food processor and blend until well mixed. (If you do not have a food processor, blend the ingredients in a bowl with a whisk until well mixed. I do not recommend putting this dressing in a blender because it is too thick.) If the dressing is too thick for your liking, add more vinegar until you reach the desired consistency.
