Chicken Spaghetti

List of Ingredients
1 2-3 lb whole chicken
1 ½ c chopped bell pepper
1 ½ c chopped onion
1 small can mushrooms, chopped
¼ cup vegetable oil or margarine
1 can each, tomato, celery, and cream of mushroom soup
Velveeta cheese cut into pieces ( usually buy small container and use about ½ of it)
1 pkg spaghetti noodles
Cajun spice of your choosing ( I usually add at least ¼ cup)
Recipe
In a large pot, cook chicken. Chicken should be covered with water. Cook until chicken is done. NOTE: I usually add lots of seasoning salt or some other seasoning in with chicken to add flavor. Remove chicken from pot, saving all broth. Debone chicken. Put aside 1 cup of broth. Cook spaghetti noodles in remaining broth. When done drain spaghetti. While noodles are cooking, sauté bell pepper, onions, and mushroom in margarine or vegetable oil, until tender. In pot, add spaghetti, bell pepper, onions, mushrooms and mix. Then add soups. Stir until all is mixed well. Put spaghetti mix back on stove on low heat. Then add leftover 1 cup of broth, Velveeta cheese and Cajun spice. Cook until cheese is melted. Be sure and stir to ensure spaghetti does not burn on bottom of pot. Yield: enough to feed 6-8 people
