List of Ingredients
1 lb. lean ground beef
1/2 t. chili powder
1 med. onion, sliced
2 c. shredded green cabbage
1/2 c. diagonally sliced celery
2 c. water
1 can (16 oz.) chili beans
1 can (16 oz.) Italian style stewed tomatoes (with juice)
salt and freshly ground black pepper to taste
2 c. hot mashed potatoes
Recipe
Brown the beef and chili powder in the bottom of a stew pot over med. high heat. Add onions, cabbage, and celery and cook until the onions are translucent. Add water, cover, reduce the heat, and simmer 15 mins. Add beans and tomatoes and juice and simmer an additional 15 mins. Taste and adjust seasonings with salt and pepper. Serve in wide rimmed soup bowls with a scoop of mashed potatoes floating on top. Makes 6 servings.
