List of Ingredients
2 1/2 c. dry lima beans
8 c. water
1 t. salt
1/2 lb. bulk pork sausage
2 med. apples, peeled, cored, and cubed (2 c)
2 stalks celery, chopped (1 c.)
1 lg. onion, chopped (1 c.)
1 clove garlic, minced
1 (28 oz.) can tomatoes, cut up
2 T. brown sugar
2 T. prepared mustard
1 t. salt
1/4 t. pepper
Recipe
Rinse beans. In 5 qt. Dutch oven or kettle combine beans and water. Bring to boiling. Reduce heat; cover and simmer for 2 mins. Remove from heat. Let stand, covered, for 1 hour. (Or soak beans in the water overnight in a covered pan.) Do not drain. Add 1 t. salt. Bring to boiling. Reduce heat; cover and simmer beans for 1 hour. In skillet cook sausage, apples, celery, onion, and garlic till sausage
is done; drain off fat. Add sausage mixture to beans. Stir in undrained tomatoes, brown sugar, mustard, 1 t. salt, and pepper. Bring to boiling; reduce heat. Cover and simmer about 1 hour longer. Makes 8 servings.
