    Darlene's French Onion Soup

    This is my Mother's recipe.


    List of Ingredients


    • 1/4 c butter or margarine
    • 4 c thinly sliced onion
    • 4 cans (10 1/2 oz) condensed beef broth, undiluted
    • 4-6 slices French Bread, 1 inch thick
    • 1/4 cup grated Gruyere cheese or shredded mozarella
    • 2 T grated Parmesan cheese


    Instructions


    1. In butter in large skillet, saute onion until goldent but not browned - about 8 minutes.
    2. In medium saucepan, combine beef broth and sauteed onion; bring to boiling. Reduce heat; simmer, covered, 30 minutes
    3. Meanwhile, in broiler, toast bread on both sides. Sprinkle each slice with grated cheeses, dividing evenly. Broil until cheese is bubbly - about 1 minute.
    4. To serve: Pour soup into individual soup bowls. Float toast on top, cheese side up.


    Final Comments


    Makes 4-6 servings.
