Gougeres "French Cheese Ring"

List of Ingredients
- 1 1/2 cups water
- 9 Tbsp. butter
- 2 tsp. salt
- 1 1/2 cups sifted flour
- 6 eggs, beaten
- 2 cups swiss cheese, grated
- 1 egg beaten, for glazing
Instructions
- Preheat oven to 400 degrees.
- Bring the water, butter and salt to a boil in a saucepan. When the butter has melted, remove the pan from heat and vigorously beat in all the flour at once. Continue beating until flour is totally incorporated.
- Return saucepan to moderate heat. Beat constantly with a wooden spoon until the dough forms a ball and comes away from the sides of the pan (about 2-4 minutes).
- Remove saucepan from the heat. Beat in the eggs alitttle bit at a time, making sure each addition is well incorporated before adding the next. Gradually beat in the grated cheese.
- With moist hands, form the dough into a sausage roll and twist the roll into a ring.
- Place on a greased cookie sheet, make a few slits on the surface of the dough with a knife. To glaze-brush with the beaten egg.
- Baake 30-35 minutes, until the cheese pastry is golden brown on the outside and has puffed up. (Do not open the oven door during baking.)
- Slice and serve immediately as an appetizer.
- Serves 4 to 6.
