    Green Dragon Cake

    List of Ingredients


    • 1/2 cup boiling water
    • 2 cups finely chopped zucchini
    • 1 cup flour
    • 1 1/4 cups sugar
    • 1/2 cup oil
    • 1 1/2 tsp. baking soda
    • 1/2 tsp. salt
    • 1 tsp. ground cinnamon
    • 1 tsp. ground cloves
    • 1 tsp. ground nutmeg
    • 1 tsp. vanilla
    • 3 eggs
    • 1 cup chopped walnuts
    • Cream Cheese Frosting ( See page )


    Instructions


    1. Preheat oven to 350 degrees. Line two 9" round cake pans with baking parchment or aluminum foil.

    2. Pour boiling water over zucchini in a large mixing bowl.

    3. Add the next 11 ingredients and beat at medium speed for about 3 minutes.

    4. Pour batter into prepared pans and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

    5. Cool cakes completely. Turn cakes out of pans and peel away parchment paper or foil.

    6. Cut the cakes as shown in diagram (fig. 7a) and arrange on a foil covered 18x 36 inch piece of cardboard.

    7. Prepare frosting and frost cake, completely coating it.

    8. Fill a pastry bag fitted with a leaf tip with remaining frosting. Pipe scales on the body of the dragon beginning at the neck and working toward the tail.

    9. Insert chocolate scales down the back and tail. Slice marshmallow in half and insert in position for eye (use a piece from chocolate scales for pupil).

    10. Split licorice twist at one end and insert the other end in the mouth.
