Green Dragon Cake

- 1/2 cup boiling water
- 2 cups finely chopped zucchini
- 1 cup flour
- 1 1/4 cups sugar
- 1/2 cup oil
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1 tsp. ground cloves
- 1 tsp. ground nutmeg
- 1 tsp. vanilla
- 3 eggs
- 1 cup chopped walnuts
- Cream Cheese Frosting ( See page )
Instructions
- Preheat oven to 350 degrees. Line two 9" round cake pans with baking parchment or aluminum foil.
- Pour boiling water over zucchini in a large mixing bowl.
- Add the next 11 ingredients and beat at medium speed for about 3 minutes.
- Pour batter into prepared pans and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Cool cakes completely. Turn cakes out of pans and peel away parchment paper or foil.
- Cut the cakes as shown in diagram (fig. 7a) and arrange on a foil covered 18x 36 inch piece of cardboard.
- Prepare frosting and frost cake, completely coating it.
- Fill a pastry bag fitted with a leaf tip with remaining frosting. Pipe scales on the body of the dragon beginning at the neck and working toward the tail.
- Insert chocolate scales down the back and tail. Slice marshmallow in half and insert in position for eye (use a piece from chocolate scales for pupil).
- Split licorice twist at one end and insert the other end in the mouth.
