Cream Puff or Cream Pie Fillling

- 1 cup sugar
- 1/2 cup flour
- 1/2tsp. salt
- 2 cups milk (scalded)
- 3 egg yolks
- 2 Tbsp. butter
- 1 tsp. vanilla
Instructions
- Mix sugar, flour and salt in the top of a double boiler.
- Stir in milk and cook over boiling water about 10 minutes. Stirring until thickens.
- Add slightly beaten egg yolks and cook 2 minutes stirring constantly.
- Add butter and vanilla and cool slightly.
- Pour into baked pie shell or use for cream puff filling.
- Modifications:
Coconut: Stir 1/2 cup shredded coconut into cream filling and sprinkle on top.
- Chocolate: Add 2 sq. chocolate to milk. Beat until smooth. Reduce flour to 5 Tbsp.
- Butterscotch: Substitute 1/2 cup packed brown sugar for granulate sugar and increase butter to 3 Tbsp.
