    Recipe Introduction


    At the bottom you'll find a "recipe" for Seafood Paella. I have not made it myself, but my sister-in-law has. I use her words exactly for the "recipe" so as not to make any mistakes.


    List of Ingredients


    • 4 chicken breasts
    • salt & pepper
    • 1/4 C butter, melted
    • paprika
    • 2 cloves garlic, minced
    • 1 md onion, chopped
    • 1 1/2 C regular rice
    • 1/3 C oil
    • 3 C chicken broth
    • 1 lb canned tomatoes
    • 1 tsp salt
    • 1 tsp sugar
    • 1 lb raw shrimp, fresh or frozen
    • 1/8 tsp red pepper
    • 1 green pepper, chopped


    Instructions


    1. Place chicken breasts, skin side up, in greased 9x13 pan. Season with salt & pepper, brush with melted butter. Sprinkle with paprika.
    2. Cover with foil and bake at 350* for 40 min. Uncover, bake 20 min or until tender and nicely browned. Baste occasionally with drippings.
    3. In large skillet, cook garlic, onion and rice in hot oil, stirring constantly. Add green pepper, broth, tomatoes, 1 tsp salt and sugar. Cover; boil gently for 20 min or until rice is tender. Stir occasionally.
    4. Stir in shrimp and red pepper. Cover and continue cooking 5 min or until shrim is cooked and liquid is absorbed.
    5. Spoon rice onto large platter. Arrange chicken over rice.


    Final Comments


    To make Seafood Paella use the same recipe except leave off the chicken part. Add clams, mussels, oysters, lobster, crab, scallops, any kind of steak-like fish cut into cubes (tuna, salmon, etc). You can steam the seafood in sherry and water if you like before you add it to the rice dish. If you steam it in the rice dish, add at least a cup ot 2 of extra water and cook with lid on until liquid is absorbed.
    NOTE: if any of the clams or shell fish do not open, do not eat them. Be sure to steam your seafood long enough so tht it will open, but not get rubbery.
