English Muffin Pop Ins
1 C grated sharp cheese
1 C mayonnaise (low fat work well)
4 oz. can sliced ripe olives
1 large onion, chopped or grated
1 pkg. of 6 English muffins
Mix first four ingredients. Spread on muffin halves. At this point I
freeze them on a pan. After they are frozen I put them back in the
bag the muffins came in and keep in the freezer to use when needed.
Before serving cut each muffin half into quarters. Bake at 350o for
12-15 minutes until bubbly and cheese is melted.
Of course, you can make and use them right away but I find having them
on hand works out great.
