    Jam-Filled French Toast

    List of Ingredients




    8 slices (each about 1&1/2 inch thick) day old sourdough french bread
    1/2 cup your favorite jam (or preserve or marmalade)
    2 eggs
    1 tablespoon sugar
    3/4 cup milk
    1/2 teaspoon vanilla extract
    1/8 teaspoon ground cinnamon
    2 tablespoons butter
    1 tablespoon salad oil
    confectioners sugar (for sprinkling)

    Cutting from bottom of each slice through center almost to top, slash a pocket in each piece of bread. Squeeze bread slice lightly to open pocket and fill each pocket with about 1 tablespoon or jam (or whatever you prefer).
    In a shallow bowl, beat eggs with sugar, milk, vanilla and cinnamon. Dip each filled bread slice in egg mixture to coat well.
    In a large, shallow frying pan, melt 1 tablepoon of the butter with oil over medium heat until mixture is foamy. Add bread slices and cook until well browned and crisp on each side, turn once, adding remaining butter as needed.
    Serve french toast hot & sprinkle with confectioners sugar. Serves 4.
