    Scrambled Eggs with Cheese and Chives

    List of Ingredients




    4 eggs
    1 loosely packed cup of coarsely grated cheese (like cheddar or gouda)
    2 tsp. chopped chives
    2 tbs. butter
    Kosher salt
    Freshly ground pepper

    Place two plates in the oven to warm up.

    Place a heavy frying pan on the stove over medium heat.

    Break eggs into a bowl. Beat with a fork. Stir in the grated cheese
    and the chives, a pinch of salt and pepper.

    Put butter into the now hot frying pan. It will melt immediately and
    foam. Pour in the egg and cheese mixture. Turn down heat to low. With
    a fork, keep the eggs moving in the pan, pulling up the cooked edges
    so that the loose egg makes contact with the hot surface of the pan.
    Just as eggs are about to set, turn off heat and continue stirring
    unto eggs are set.

    Divide onto the two hot plates.

    Serves 2.
