Caramel Apple Cake

Caramel Apple Cake
2 cups granulated sugar
1/2 cup vegetable oil
2 eggs
1 teaspoon McCormick maple extract or carmel extract
2 cups all purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
3 medium Granny Smith apples (peeled, cored and coarsely chopped)
1 cup chopped walnuts or pecans
Preheat oven to 325 degrees. For cake, mix sugar and oil together in a large bowl. Add eggs and maple extract, beating until smooth. In another large bowl, sift together next four ingredients to creamed mixture mixing well. Fold in apples and nuts. Spoon batter into 10 greased and floured miniature bundt cake pans, filling each 1/2 full. Bake 25 to 30 minutes or until a toothpick comes out clean. Turn onto wire rack to cool completely
Glaze
1/4 cup butter or margarine
1/4 cup firmly packed brown sugar
1/4 cup milk
1 1/2 cups confectioners sugar, sifted
1/2 teaspoon vanilla extract
1/4 teaspoon maple or caramel extract
For glaze, melt butter in a medium saucepan over medium heat. Add brown sugar and stir constantly until sugar dissolves. Remove from heat and stir in milk. Beat in confectioners sugar, vanilla and maple extract using lowest speed of an electric mixer. Drizzle over the cakes. Allow glaze to harden. Store in airtight container.
