    Chocolate Lady Finger Cake

    1/2 pound Baker's, Ghiradelli or other good quality semi-sweet baking chocolate
    3 tablespoons powdered sugar
    3 tablespoons warm water
    4 egg yolks
    4 egg whites, beaten stiff
    1 teaspoon vanilla extract
    1 1/2 dozen lady fingers
    1 pint whipping cream
    2 tablespoons granulated sugar
    1/2 teaspoon vanilla

    Melt the chocolate in a double boiler. Add powdered sugar and warm water. Cook until the mixture forms a smooth paste. Remove from heat and cool.
    When mixture is cooled, add egg yolks one at a time, beating after each addition. Fold in beaten egg whites. Add vanilla and stir.

    In a non-stick loaf pan, add a layer of lady fingers and a layer of chocolate mixture alternately until the pan is full. Cover with plastic wrap and refrigerate for 12 hours. Before serving, prepare whipped cream, adding sugar and vanilla. To serve, spoon the dessert into sherbet glasses and top with whipped cream.
