    Chocolate Mint Cheesecake

    List of Ingredients

    Oreo Cookie Crust Ingredients:


    1 lb 4 oz. pkg finely crushed Oreo cookie crumbs
    4-5 Tablespoons melted butter or margarine


    Mix ingredients together well. Press into bottom and up the sides of a 10" to 12" springform pan with 4" sides. Place in refrigerator while preparing filling.

    Chocolate Mint Cheese Cake Filling Ingredients:

    four 8 oz. packages softened cream cheese
    1 cup granulated white sugar
    5 large eggs
    6 oz. melted and cooled semi-sweet chocolate chips


    Beat cream cheese with sugar until smooth and creamy-about 1 to 2 minutes. Add eggs, one at a time, beating well after each addition. Fold in melted and cooled semi-sweet chocolate chips and 18 unwrapped chocolate mint candy thins, coarsely chopped (like Andes). Pour evenly into crust. Bake at 425F* for 15 minutes. Reduce oven temperature to 225F and bake for 50 minutes. Remove cheese cake from oven and spread with sour cream-vanilla extract topping.

    Sour Cream-Vanilla Extract Topping Ingredients:

    1/2 cup dairy sour cream
    1 teaspoon real vanilla extract


    Combine sour cream with vanilla extract until mixed-spread evenly over cheese cake. Return to oven to bake at 350F for 7 to 10 minutes, or until topping is set. Cool completely. Refrigerate at least 6 hours before serving. If desired, decorate with whipped cream, chocolate shavings or more chocolate mint candy thins (like Andes).


    *Some folks claim that if you put a sheet pan of boiling water on the rack below (NOT UNDER) the cheese cake, that this will create a humid atmosphere and then your cheese cake won't crack. It never brothered me if my cheese cake cracked, I always decorated it with whipped cream, fresh fruit or chocolate shavings, etc.
