    Genie's Minister's wife chocolate Cake

    List of Ingredients

    [Sure ain't Aunt Eleanor & Uncle Cecil's dozen boiled eggs in a carton unshelled. Cecil was a mooching minister.]

    2 cups sugar
    2 cups flour
    1/2 tsp salt
    1 tsp baking soda
    1 tsp ground cinnamon
    1 cup water
    1 stick butter or margarine
    1/2 cup vegetable oil
    4 tblsp cocoa powder
    1/2 cup buttermilk
    2 eggs, slightly beaten
    1 tsp vanilla extract

    Sift together the sugar, flour, salt, soda and cinnamon. Set aside. In a saucepan, place water, butter, oil and cocoa. Bring to a boil and pour over the dry ingredients. Mix well. Combine the buttermilk, eggs and vanilla and add to the chocolate batter. Mix well. Pour batter into a greased and floured 13x9 inch baking pan. Bake in a preheated 400 degree oven for 20 minutes, or until cake tests done. Start Frosting 5 minutes before cake is done.

    Chocolate Fudge Frosting

    1 stick butter or margarine
    4 tblsp cocoa powder
    6 tblsp milk
    1 pound confectioners' sugar
    1 tsp vanilla extract
    1 cup pecans, chopped

    Place butter, cocoa and milk in a saucepan and bring to a boil. Be careful not to burn. Remove from heat and add powdered sugar and vanilla. Stir until well combined. Stir in the pecans and mix well. Spread over the hot cake as soon as it comes from the oven and serve from the pan.

    This recipe was given to my by my minister's wife about 35 years ago. The first time I made it, I left out the cinnamon because I thought I wouldn't like it. It made a good moist chocolate cake, but it wasn't anything different from some of my other recipes. The next time I made it, I decided to add the cinnamon. What a difference! That's what sets it apart from all other Chocolate Cakes.
