    Italian Cream Cake

    List of Ingredients






    1/2 cup shortening
    1 stick margarine
    2 cups sugar
    5 eggs, separated
    1 cup buttermilk (if you don't have buttermilk, put 1/2 teaspoon vinegar in a cup of milk)
    2 cups flour
    1/2 teaspoon salt
    1 teaspoon baking soda
    1 tablespoon vanilla
    2 cups coconut
    1 cup pecans, chopped
    1/2 cup maraschino cherries, chopped

    Icing
    1 stick margarine
    1 8-ounce package cream cheese, softened
    1 cup pecans, chopped
    1 pound powdered sugar
    1 teaspoon vanilla

    Cream shortening, margarine and sugar. Add egg yolks, one at a time, and cream well. Add buttermilk slowly to shortening mixture, alternating with dry ingredients (flour, soda, salt). Stir in vanilla. Add coconut, pecans and cherries. Fold in stiffly beaten egg whites. Bake in three greased cake pans at 350 degrees for 40 minutes. Mix all icing ingredients together and frost when cool. Then garnish with maraschino cherry halves.
