    Low-fat New York Style Cheesecake

    List of Ingredients






    1/4 cups low-fat or sugar free vanilla wafer crumbs
    4 tablespoons margarine, melted
    3-4 packets equal sweetener or 5-1/2 to 6 teaspoons of Equal Measure
    2 eggs
    2 egg whites
    2 tablespoons corn starch
    1 cup reduced-fat sour cream
    1 teaspoon vanilla

    Mix vanilla wafer crumbs, margarine, and equal (3-4 packets) together.
    Press into the bottom of a 9-inch spring form pan. Reserve about 1 tablespoon of crumb mixture for later. Pat evenly on bottom of pan and up sides about 1/2 inch. Bake in 350 degree oven for about 8 minutes. Or until crust is lightly browned. Cool on a wire rack.

    Beat cream cheese and 18 to 20 packets Equal (or Equal Measure) in a large bowl until fluffy. Beat in eggs, egg whites and cornstarch. Mix in sour cream and vanilla until well blended. Pour mixture into crust in pan.

    Place cheesecake in roasting pan on oven rack, add 1 inch hot water to roasting pan. Bake in pre-heated oven at 300 degrees. Just until set in the center. About 45 to 60 minutes. Remove cheesecake from roasting pan, sprinkle with remaining crumb mixture and return cheesecake to oven. Turn off oven and let cheesecake cool in the oven with the door ajar for about 3 hours. Refrigerate 8 hours or over night. Serve with Low-fat Cherry pie filling on top if desired.
