    Peaches and Cream Jello Cake

    PEACHES & CREAM CAKE

    Make a yellow cake mix according to directions:
    Except use Buttermilk instead of water.
    Then whip in 1 cup of peaches (Either fresh or canned) in the batter.
    Then bake as directed in 9 X 13 pan.

    After you get this out of the oven, have 1 Large box of Peach jello made according to jello directions. Poke holes in cake all over. Pour half of jello over cake. Let cool in fridge.

    Mix 1 cup of peaches with remaining jello & let cool (Not in fridge)I usually mash peaches (You don't have to)

    Beat together:
    2 8 oz Cream Cheese
    2 Cups Powdered Sugar
    1 12 oz Cool Whip
    Spread this on top of cake

    Pour remaining jello & fruit over top of cake. Put in fridge until jello sets up

    Bet you won't have one peice left wherever you take this. I don't !!!!!

    I froze the left over icing because I had way too much. Next time I'll use a small box of jello and cut the icing down by 1/3. I also thought about making the cake in a bundt cake pan, that would probably work.
    Also, the jello/peach mixture on top of the cake looked absolutely fabulous, but you couldn't leave the cake sitting out for too long because the jello begins to melt. You could probably make a peach, water, {missed adding sugar!] cornstarch glaze to put on top of the cake?!#

    I thought about baking the cake in 2 springform (9" or 10") pans - those are kinda deep, and that way there'd be room for the frosting and jello on top. It would probably look pretty too once you took the sides of the pan off.

    I guess my cake pan is deeper than anyone elses. If you use a lasagna pan it should be just right for you. Sorry.
