    Welsh Cakes

    List of Ingredients




    2 cups flour 500ml
    2/3 cup white sugar 160mL
    1/2 tsp salt 2.5mL
    3 tsps baking powder 45mL
    1/2 cup butter 125mL
    1/2 cup currants 125mL
    2 eggs, beaten
    1 tsp. vanilla 5mL

    Mix dry ingredients. Add butter, eggs, vanilla and currants. Flour
    your board. Mold into a ball and roll out to 1 1/4 inch thickness.
    Use 3 inch glass as cookie cutter. You can re-mold and cut extra
    until all dough is used.
    Fry at 320 degrees (approx. no. 4) just until browned then flip and
    do same to other side. Place on paper towel to cool.
