Butterscotch Drops
2 cups (500 ml) dark brown sugar
1/4 cup (60 ml) molasses (treacle)
1/2 cup (125 ml) butter
2 Tbs (30 ml) water
2 Tbs (30 ml) cider vinegar
Combine all ingredients in a saucepan and bring to a boil over
moderate heat, stirring to dissolve the sugar. Boil until the mixture
reaches the hard-crack stage, 300F (180C). Drop from a teaspoon onto
lightly buttered aluminum foil or marble slab and allow to cool.
Makes about 1 pound (450 g).
